Easy Slow Cooker Chicken Soup

This Slow Cooker White Bean Chicken Chili recipe is from Plain Chicken reader, Penney. The chili is super easy to make. You just dump everything in the slow cooker and let it do its thing. Chicken, white beans, diced green chiles, chicken broth, salsa, cumin, and grated cheese. It smells amazing while it is cooking and tastes even better!

I think what really put this chili over the top is the grated cheese in the soup. YUM! I've never had a white bean chicken chili with cheese cooked into it. It won't make it another way! We ate this for dinner and had the leftovers for lunch the next day. It was just as good reheated, if not better! Give this a try ASAP!

How to Make White Bean Chicken Chili in the Crockpot

As I said, this chili is super easy to make. Place chicken breasts, white beans, diced green chiles, salsa, chicken broth, cumin, and grated pepper jack cheese in the crockpot. Cover and cook on LOW for 6 hours. Remove the chicken breasts from the slow cooker and shred with two forks. Add the chicken back to the slow cooker and stir.

  • You can use any boneless skinless chicken in this soup. Chicken breasts, thighs, or tenderloins all work great.
  • I used pepper jack cheese. Monterey Jack cheese is also delicious in this chili.
  • Is White Bean Chicken Chili spicy? The spice level will depend on the heat level of the salsa that you pick.
  • Our favorite store-bought salsas are Mateo's, Kylito's, Pace Picante Sauce, and Pace Restaurant Style Salsa. I find them at Walmart.

  • Can I freeze leftover soup?  Yes! You can freeze leftovers for a quick meal later. Cool the soup completely and place in plastic containers or freezer ziplock bags and freeze. When ready to serve, partially thaw and warm on the stovetop or in the microwave.
